Sony A7RII.

It's small and lightweight, has one of the best sensors, probably has good-enough AF performance, and it has weather resistance. At around $1000USD used, it seems to me to be one of the best fits for you.

The Tamron 17-28mm f/2.8 ($849) or Samyang/Rokinon 18mm ($299) are both good options for wide-angle stuff that are pretty portable. The new Tamron 70-300mm ($549) is another affordable option that's also quite portable.

The A7RII used with the Tamron 17-28mm and 70-300mm at under $2500 is a really good kit that would be tough to beat for a portable and weather-resistant landscape photography setup.
