I have a Canon which does really DEEP focus pulls in manual mode. I love it.

My G7 Does not do that at all - would the GH5 with 12 - 60 do the same job or is this focus pull element something more to do with DSLR vs Mirrorless?

The Canon is a 700d with the 18-55 Kit lens - I can't use it for much because its not 4k but its really full and almost 3d in its quality...

Help would be much appreciated.

The GH5 has an autofocus pull feature.  I don't have a GH5, so I can't speak to it's effectiveness.

In general, focus pulling works with lenses that have a repeatable manual focus mechanism, generally indicated by the existence of a focus distance scale on the lens.

Most "focus by wire" lenses include an acceleration component that changes the scale based upon the speed you rotate the focus ring; this makes them generally non-repeatable.

All of the Panasonic lenses I have (I don't have the 12-60) are "focus by wire" and not suitable for focus pulling.  If I'm going to pull focus, I use lenses with repeatable manual focus: third party manual focus lenses, adapted Nikon AF D lenses, and Olympus lenses that have the manual focus clutch (generally the PRO lenses).  The disadvantage of m43 is that some of the lenses are really too small to put on a follow focus ring (like the Loawa lenses, and the Olympus 12mm and 17mm).
