Let me throw a little spice on the conversation and say this is a cycle, one that I myself go through. We all want something that can do everything. The reality is the M system can do most, but not all things. That's my chief complaint regarding the M is some of the lens options have "holes" in it.
FF options though are much heavier, but also deliver in terms of image quality and more wide array of options. It's also more expensive.
This is going to go against your thought train but both are needed: Folks like yourself appreciate high image quality of a 6D Mark II, but, enjoy the "fun" of an M. I did the same with owning both an M and R systems for a while. It drove me mad having two ILC systems and juggling them as I'm an amateur so there are other pitfalls to consider. I've also made the mistake of going all M and missing fast primes and fast zooms. Don't make that mistake either.
All to say, you can look at an M6 II and an R/P, but, keep in mind the limitations of each. If you have the funds, consider both, or even keeping what you have. As much as I go back and forth, you need to listen to your gut... Something tells me not to buy the R5/6 for example, or go back to the M. Truthfully what I have works. It sounds like what you have does too.
The biggest advice I'll give, is look at the M6 Mark II itself pretty hard, and, the R/P pretty hard. Maybe you upgrade both. An RP + RF 35 is deadly.

Note, the RF 35, that is FF equivalent, has more oomph at the end of the day.
Likewise, the RF 28-70 f/2L, which you may never own, but just to demonstrate FF has advantages...

You can't get those results from the M, but, who wants to carry around that much glass everywhere?

Don't be set on selling the 6D II, it's a good camera. That said, it's true an RP + RF glass is potent and lighter than a 6D II + EF glass. It also doesn't quite match the portability of an M though.

Keep a close watch on Black Friday / Cyber Monday sales... M6 Mark II hit $799 on Prime day, expect it to happen again. Likewise, an RP with kit glass say RF 24-105 f/4-7.1 could range $999. Consider carefully the image quality and portability of both.
I know in this instant you think the M is the answer, and it's a good answer, but to give you a reality check, it cannot match your 24-105 or 16-35 f/4L zooms...
