Filters: Where to start?

Filters: Where to start?

I have several different size lenses with various diameters, that being 49mm, 52mm & 72mm so far.

I want to start using some color filters for my Black & white work (I work in film) and also some ND filters.

Should I get a large round filters, big enough for my largest lens, and then buy some step down adapters? or would I be better off getting square filters? Do you need a different holder for each size lens, or are the holders adjustable to lens diameter?
My third option would be to get lots of filters to fit all my lenses, but that sounds a very expensive option.

What's the pros and cons of each setup?
Can you advice brands to get or specifically avoid?

Note. My film lenses are mostly 1970's glass, although I do have a more modern Sony RX10 mk4 that I use too.
