M bodies are light and small so they don't add much weight. I would never bring 2 DSLRs as they just don't feel comfortable swinging a pair of my neck.
😁 Welcome to wedding photography. 5DIII on the left with 70-200 plus 580EXII flash and 5DIII on the right with 24-105 and Phottix Mitros+ flashgun (and modifier) hanging from a Black Rapid Double strap looking like a fat version of Clint Eastwood in a duel.. oh and did I mention the 85/1.8 and spare everything in a fanny pack.... no wonder I have back problems....

ZERO timeto be switching lenses. Sometimes you can't even pause to grab a drink of water (esp when shooting solo). Double-fisted is the way to go!
OMG you brought back so many memories - Greek weddings last ALL DAY (10am for bride prep until 4AM last man standing! - none of this "I'll shoot until the first dance" here otherwise you will get no bookings), and often you'd last all day without food (and the food at Greek weddings is usually mouth-watering and plenty) especially if shooting solo as you mention...... I always take a couple of energy bars with me to keep me going...
Years back I vowed to never shoot another wedding again! I've only done sloppy seconds since then . I did lose a good shooting friend when I refused to shoot her daughter's wedding about 5 years ago. Was a really tough price to pay. Alas.
I wish you the best on your rekindled business Alexis. I think you'll find the M6ii to be very capable for a lot of the (color) shooting. Keep a FF for the church and big group formal shots. Cheers and stay safe.
I think I may have confused you. I have NO intention of going back into wedding photography. Yes, I'm shooting 3 weddings (Covid allowing) in 2021 for friends. One in London (where I'll rent R5/6 plus RF glass) and 2 in Greece (where I might just use EF-M kit or might borrow my daughter's 5D3/6D and L lenses) and that's it... no more
