It varies. The P40 Pro gets full resolution off the main camera, but only binned of the ultra wide one. The Xiaomi's apparently can get full resolution JPGs, but not RAW.

1.6 um seems to be a good size for pixels. Coincidientally, this is where I end up scaling the 50 MP RAW photos (1.22 um unbinned) to (30 MP).

Xiaomi use the Samsung s20+ sensor, the 108mp Bright S5 line, they just do a better job than Samsung with it. Sensor size 1/1.33", pixel size 0.8 um but quad bayer so 3.2um. So big sensor and big pixels = LOTS of light, which in turn means good IQ.
The P40 Pro turns the notch up slightly further, it uses the Sony IMX700, which is a 1/1.22" sensor, as you said 1.22um x 4
What is impressive about the P40 Pro is the 10x Optical Zoom with OIS. That is ground breaking.
Huawei are using all the point and shoot camera tricks, quad bayer sensors, RGGB to RGB, Leica lenses is the premium delineation over other Phones.
Is no wonder they were #2 brand globally in q1 and 2 2019. Then they were lamed by the banning of playstore on them, which I do not get as I believe the security concern was with the mobile internetworking devices not the phones. Even so, they were dead set equal with samsung last quarter at 20% share. What has been the big mover is Xiaomi and downward Apple (I think this models pricing, especially the 5.4"mini will lift sales). Sam 20%, Hua 20%, Apple 14%, Xiaomi 10%. Oppo 9%........

And we are nearly at the holly grail in phone photography that is a 1" sensor, like the RX100 camera has been using for a decade. I think within 3 years we will be there
And if we are getting 10x optical zoom phones, well that could be the nail in the coffin for point and shoot cameras.
Although I think it would be odd to see Sony shoot itself in the foot with mobile sensors while still being the biggest game in camera sensors. Perhaps they too think mobile phones, being on you all the time, is the future of point and shoot photography......
