The thread is long, and I haven't read it all - so sorry if this is already mentioned!

When bouncing off the ceiling, it will most probably get "flat and boring" because the whole room will be one big light source (=no shadows=low contrast=flat=boring). And you mentioned this as well.

My tip here is to put some black foamboards/fabric/whatever that blocks the light - just outside the camera frame! That way, the only light that will hit your subject is coming from the ceiling. The higher you can make these "walls," the more contrast and defined shadows you'll get, but still have super soft light and beautiful catchlights in the eyes!

But it's quite fun to build a softbox too ;).
