Raw underexposed and jpgs don't look the same

Hello! I'm trying to play with Fuji jpgs, film simulations, and settings but I still missed something.

From what I understood, all the settings like DR, Highlights, Shadows, etc, are not applied to the raw files. Now, the first issue is, why my jpgs results in a different white balance and way less processed than the raw files?

Settings:

  • Classic Chrome
  • Grain Strong Small
  • Color ch Strong
  • Color ch blue Strong
  • White balance Auto R2 B-5
  • Dynamic Range 200
  • Highlights -1
  • Shadows -1
  • High ISO NR -2

It seems that in the jpg the white balance is different and the only two things not shown in the raw are the grain and the color chrome effects. I opened the raw file also in Capture one and there is just 5% of grain added, all the rest of the settings are at 0.

Another strange thing I noticed is when I tried to see how the jpgs reacts to a super basic film simulation. I added just Provia standard and anything else, no DR, nothing. The big difference is that the raw is underexposed by one exact stop.
