Do you really need a desktop for editing?

Okay before I get lots of pointed "of course you don't" replies, let me set the context. Yes I know many professionals edit exclusively on laptop/surface/etc... Here I am purely referring to the advise you sometimes hear that for the best performance editing photos, a desktop is going to win every time.

But why should that be? I have seen Laptops configured exactly like desktops for not too much more. I've seen laptops with specs just as Intel i9 10th generation processors, 32GB RAM, nVidia graphics cards, and SSD hard drives. Since they are similarly configured to desktops, shouldn't they be just as fast and capable as a desktop? Do they really trade anything off for their size?
