I've done this for several years. My first body was the original M and later added the M3, now I have replaced those with two M5 bodies. I like to travel with these when weight or the size of my carryon gear is important but also use them a lot for summer family get togethers. I typically have the EF-M 11-22mm on one and my Tamron 18-400mm on the other with the EF-EM adapter.

Did a trip to Singapore last summer and also fall trips to Amsterdam and England and those were the 2 lenses I seemed to use the most.  With that range I rarely choose another lens.  I often also carry the 22mm in my bag as it is light and small and great for when out after dark in the city. I also often take along a Lensbaby Composer with the 35mm element for artsy stuff.
