A pano starts on the left or right, not somewhere in the middle.

First determine how you want to display it, so that the exposure is proportional for each image.

Almost all cameras have some kind of spirit level, which you keep an eye on when you are busy determining the composition. After all, you want the images on an imaginary horizon to be the same only.

If you want a "just aligned" pano, use a tripod and pano head. And then you have to figure out how many degrees you have to turn to maintain a correct overlap in order to be able to stitch the images, which differs per focal length.

Handheld is also possible, but then it will be reasonable to hold onto the imaginary horizon in advance.
