Shouldn't Raw and JPEG be 100% identical right out of the camera?

You're right, However, for practical purposes the net result is te same- ie. you can view your jpeg on any device with more or less similar results while the way your RAW file "looks" will depend mostly on RAW viewer settings. Your built-in camera profile and WB can be taken form metadata, but it varies depending on software support and viewer settings.
