I've got all three - D800e, D810 and D850.   I use one for a few years, add the next newer one and relegate the old one to 'second camera'.  In short, I've used them all a lot, in the same sort of ways and can compare.   Except any video, which I rarely do.

The only difference between the D800e and D810 was in the body, mainly shutter.  But those were significant differences, as was the addition of group AF.  Autofocus otherwise the same, resolution the same, dynamic range the same - sensor is the same wrapped in a less-convenient body.   The D800e is slower, and it feels it.   If that sort of shooting is OK, then you can save a fair amount of money on one, I suppose.  I'd still prefer the D810.

You've already had the D850.  If you've not shot a D800/810 before, you may be disappointed.  The autofocus is different from the older models.  Likewise the frame rate.  Overall it's just snappier.
