Removing background from a flower in photoshop

Hi guys! I have a question about photoshop.  I recently posted a question about how to photograph flowers.  A few people recommended I get a scanner. So, I went out and picked up an Epson Perfection V600 photo scanner.  The pictures turned out great but I have a question.

When I scan the photo, no matter what I do it's impossible to get a perfectly white background. So, I've decided to just change the background to white in photoshop.  What is the best way to get a white background?  The picture above is my first attempt.  I used a mask and then solid color layer to get the white background. I feel like the image really doesn't look good with the white background. And the edges aren't good either. What can I do to fix this?

And with this one, the flower is translucent. So what is the best way to compensate for the gray showing through when I change the background to white?
