How to focus more than one person?

I was at a family day yesterday and took my camera along. I took some photos of my niece and her husband together, using my tripod and 50mm lens. The problem I had was, how do I get them both in sharp focus?

I put the focal point on her eye as I'd learnt from videos. But I ended up with photos of her in sharp focus and him in softer focus.

There was one photo that was ok and I used the radial filter inverted to sharpen up his face a bit. The photo was taken at f2.8.

So yeah, what's the best way to do that, where should I be placing my centre focal point, and should I be in spot metering?
