The plane of focus is flat to give even focus across a flat sensor.

Camera lenses do that (more or less) because sensors are flat.

Sensors are flat because:

- It's easier to make them that way;

- They sit behind a 'focal plane shutter' that runs in a straight line (flat);

- Digital cameras were developed from film cameras in which the film was held flat (for much the same reasons as above).

I suspect that different degrees of curvature would suit different types of lenses.  Probably the degree of curvature appropriate to a wide angle lens would be greater than for a long lens.  So 'flat' offers certainty and consistency to lens designers.
