How does a manual FD lens work with a Canon R

I'm buying an R5 but assume the question will work for an EOS R.

How does the aperture ring work on the R with a manual lens? Does the camera adapter close the aperture down when you take a shot or do you have to manually close down the lens? Normally on the old lenses you focus with the lens wide open and when you take a picture, the camera closes down to the set f stop. Does that work or do you have to manually close down the lens before taking a picture?

Do you get any help from the internal light meter or do you have to use a hand held light meter or just take shots until you get the light right? I have an F1 and an AE-1 with a number of lenses and I'm trying to figure out if it's worthwhile to buy an adapter?

Also is there any difference in adapters? Which one is the best?

None of the YouTube videos show anything about how to actually take a picture with an FD lens mounted on an EOS R with an adapter. I would just like to see the steps a photographer normally does to take a picture with a manual lens.
