Boaria is a misleading Latinism. The Boaria is where the oxen who ploughed the fields and pulled the carts were kept. I had to look it up when I got home.

Salariati is I supposed where the salaried farm workers lived, but it seemed a small building.

This estate has several of these building like the cheese factory and repair facilities. All will the green writing.

You are probably right about salt. It was a very valuable commodity here once. We have several "salt roads" that cross the Apennines.
