Maybe true; digital cameras nowadays have all kinds of features the Nikon D70 could only dream of. With some, it looks like the auto focus alone menu is almost longer than the entire custom settings menu of the D70 Of course, you could make your regular menu a lot easier, with the menu personalisation modern cameras offer. But before you get to that point, you need to understand modern technology.

Early DSLRs were mostly easier because they lacked those advanced features, I guess. And that automatically lead to less menu options.
