The primary contribution to their colour and contrast was the choice of light - direction and quality. Finding the right location (no direct sunlight, nice diffuse light) is rule #1.

The second is nailing the exposure.

It's impossible to say what other tweaks were made because I can't see the originals, but I suspect there was a bit of tone curve adjustment and a few colour tweaks.

But mainly, it's the way they are lit that matters.
