M-mount lens options. Canon EF-EOS M adaptor essential?

I expect I'm not alone in the following situation.

Step 1: Read very positive reviews on the Canon EOS M6 Mark II.
Step 2: Think, "I like that camera!"
Step 3: Check out current M-mount lens choice and quality.
Step 4: Wonder where the missing M-mount lenses are.

Hence these questions:

1. Is it partly the case that Canon hasn't introduced many M lenses, because it knows that enthusiasts are likely to use the Canon EF-M-mount adaptor with Canon APS-C DSLR lenses?

2. How good is the Canon "Mount Adapter EF-EOS M" for this purpose?

3. What adapted Canon EF / EF-S lenses are the best performers for M-mount adapting, taking into account the cost/benefit ratio? (Otherwise known as the "bang for buck" ratio.)
