When you shoot movies, the shutter is always open and the mirror is always up. The only way to control exposure is to vary the aperture. Aperture priority would mean that the camera cannot vary the aperuture, and that would result in either overexposure or underexposure if the lighting changes. Point it at a bright object, and the camera cannot reduce the aperture to comensate. point your camera at a dark object and it cannot open up the aperture to compensate either.
