Do all cameras nowadays really need to cater to videographers? Am I a purist for disagreeing?

Exactly my view as well. I have zero interest in video. Would a camera be any cheaper without it? Not sure but if yes then I would like an X100 version with no video and no screen for cheaper than it is now.
Then you could have a dial on the back like Leica did.

My guess is developing a stills-only camera that isn't half baked would somehow result in the manufacturing incurring more design costs, at least initially, than the current crop of hybrid designs.

Regarding the flippy screen, I came from Canon articulating screens to Fuji's tilt screens. I initially thought I might be giving something up but quickly realized how much more I preferred the tilt screen for my photography.  I am happy I bought my X-H1 when I did, as it will hold me over for quite a while.  The only thing I might prefer to Fuji's tilt is the Pentax K-1 screen.
