Some great discussions on shutter speeds for birds in flight on the web. Good one here Fredmiranda

So when you've decided on your shutter speed and you know you want to shoot wide open, there's only ISO left to adjust for exposure.
If the light is even and likely to be constant use fully Manual and adjust it yourself. If you do this a lot, in time you can estimate it pretty accurately and tweak by taking a couple of shots. Once its set forget your exposure.

If the light is changing you can use auto ISO and adjust your compensation dial to keep the exposure right. Constantly check your shots in the viewfinder.

Most times, Manual is the easiest method to get consistency.
