Now that I've created a folder, and selected it in the SELECT FOLDER menu option, every file is getting written to that folder, even when I power the camera off and back on.

No doubt. Honestly, I was always confused about creating folders, and while now and then I considered it (for no good reason, just because it's there), it made me nervous and I felt it was looking for trouble. I see now, for good reason. Some things with Fuji are like that (like having to press Disp/Back instead of OK to save a custom configuration when in the Save Custom Configuration menu)
