Set up for BBF and remove the focusing from the shutter. YouTube Back Button Focus. Lots of explanations. Bottom line is when you’re holding the focus button, you’re in Servo. Let it go, and you’re locked.

Also, if you want to track without jumping subjects, explore the Zone AF. Allows you to track within a much smaller target.  Put the zone where you want your subject to appear in frame. I find it useful for a moving subject that I want to track, but is moving too fast for single point.  Or has other things moving around.
