I dont own a theta but do own a griii and I use affinity photo for stitching. It works well enough

My preferred process is to process dng to taste in favourite raw converter (exposure, wb, highlights) then export them all to tiff. Import to affinity to stitch and either finish off processing in affinity or export to tiff and process in favourite raw converter again. I use capture one.

You may want to check affinity can load theta dng if you want to go direct into affinity instead of tiff.

There are free stitchers like hugin and ice.
