The only difference is that one image is enlarged more than the other, the images captured by the image sensor are equal.

Assume you use the same lens for full frame and for cropping.

The image sensor is still the same (the image sensor does not change when using crop mode) so resolution and contrast in the cropped area will be similar. Crop in camera or crop in post processing - the end result will be pretty much the same.

Using different lenses to get similar field of view is another matter, but that is obviously not the case here.

Now some will chime in about the difference between FF and APS-C but that is irrelevant as long as the subject does not fill the APS-C crop area (that applies to the moon as well as birds and other non frame filling subjects) and the same lens is used.
