Light panels look/use?

Hi,

I see tutorials describing use of light panels, which are large frames supporting diffusion fabric and flashlight comes from the other side.

Could someone describe what is special about that light, it's characteristics and is it possible to simulate it with simpler more accessible equipment like V stands and softboxes and beauty dishes?

Is it just the extremely large size of it so it wouldn't be impractical to have a softbox this big, or is the quality and behavior of light so different that it is its own "type of light", like Fresnels are unique and hard to emulate with other lights.

I guess I am a bit of a textbook learner, I would like to see it put in words, I am not able to fully understand by just looking at them using it and showing results at the end what it is that I am seeing. I know, weird, a photographer that is not 'visual' but is more 'printed word'. LOL
