Some good answers above. The summary is, yes, it works, and can work reasonably well - but it's a desperation measure to employ when you have run out of other options.

Always, when the choice is there, for for bare lens first and get closer to the bird. Tattoo it on your forehead: "bare lens is best". If you can't get the shot bare lens, go to the 1.4 converter. Only when all else fails do you go for the 2x. (You can also do useful things swapping between bodies with different pixel density, e.g., 6D II & 7D II.)

(Disclaimer: I've never used a 2x with a 500/4 II, but I have used one with my 500/4 Mark I, and currently use one with a 600/4 II, which is essentially the same thing as the 500/4 II bar being a little bit longer.)
