Yes, RAWs, by definition have no color profile at all until the RAW editor applies one. Some editors (Llightroom, Capture One and probably others) can be configured to read what profile was used in-camera from the metadata and apply the same profile automatically won import. Normally there is a default profile (Adobe Color in Lightroom) and default camera specific processing applied by default (which can be significantly different between editors), but you can reconfigure the default import processing however you want. With the RAW file you can always override the default import processing and start from scratch with apply whatever sort of  color profile and processing you see fit.
