I don't know about a GX7, but I just tried it on my GX9. I was expecting the RAW files to have the full sensor image, and they did. Affinity Photo didn't even know they were supposed to be 1:1 and showed the full image. So did the Mac's finder. The file sizes are also the same, which is a good sign. A 1:1 actual crop should be 25% smaller.

In Silkypix (Pro 10), I set the crop and I could drag the crop edges outside of the 1:1 frame and get all the 4:3.

You could try an application like FastRawViewer to see all the RAW data. Which also shows the 4:3 data for me.

I'm pretty sure for the GX9, the aspect ratio is just an EXIF note. It seems it's crop instructions:

Crop Top : 8
Crop Left : 656
Crop Bottom : 3896
Crop Right : 4544

I would be totally gobsmacked to find the GX7 did it differently.

If it does do it this way, you could mess with the EXIF data and Silkypix or ACR would be none the wiser.
