Seamless transition between regular and slow motion

I am just wondering how people do seamless transition between regular and slow motion when shooting a b roll of someone or something.

Presumably I want to shoot at 60 fps so slow-mo is possible. But should I work in a 24 fps timeline?

I know it's best to shoot what I intend on working with (ie. only shoot 24 fps if I want to work in a 24 fps timeline, etc.). But when I can only shoot the scene once for one single fluid motion I think this rule has to be broken.

For example, check out the brief footage starting at 3:05 min of this video https://www.youtube.com/watch?v=Mhc-YqMyQJs
