Jpeg compression isn't lossless. To crop or process, the image has to be decompressed and then compressed again. Each time you do that you loose more image information until you end up with mush.

This hasn’t been an issue in more than two decades, unless your experience with image editing is entirely in memes.

For modern software it’s commonplace to preserve the original and only work on a copy. You have to go out of your way to get Photoshop to save as anything but a .PSD.
