Sorry Rodrigo no I don't have any official spec for the downsampling methods, Canon don't list them as official information in any way to the public.

I was given this answer from a Canon rep at an expo who gave detailed answers to all of us about what's going on inside. And they do seem to conform to common sense, the only grayish area would be if 1080p FF is Pixel-binned or Line-skipped like they did on the old Canon DSLRs.
