I wouldn't drill steel either but there are bars out there that are way overbuilt and are probably ok. Even so it is introducing a failure point on a part that you really don't want to fail. I've seen it happen with guys running ultra light bars.

Totally agree that a GoPro or equivalent is a better choice. The are designed to take abuse and optimized to deal with shaking/motion. But depends on the desired end result.
