Help with noise in 5D Mark IV

I recently purchased the Canon 5D Mark IV. I had heard how great it is with low noise at high ISO. That has NOT been my experience. I recently shot a squirrel in light shade on a clear day at f5.6, 1/500, ISO 1000 and have what I consider to be too much noise. I usually shoot aperture priority, but is there a way to override the ISO with the shutter speed automatically or is the only option to shoot manually? I'm attaching the squirrel photo in question before and after processing. I reduced size so not sure you can see much difference at the smaller size.
