Focussing

My few fumbling attempts at astrophotography has shown me how incredibly difficult it is to focus with both AF and MF. I would like to know why this is? Logic would suggest one need only focus at some point far enough away to be considered as infinity and that should be fine but no so.

Also, the new Olympus E-M1 MkIII has an AF option called "Starry Sky AF". It supposedly allows the use of AF on stars. Does anyone know why normal AF doesn't work and what are the smarts of Starry Sky AF that allow it to work?
