why on earth would I want to?

Because it can save you some money.  Of course non-M lenses aren't as compact, however, if you're willing to accept that downside you will save money if you're able to do some planning ahead.

Furthermore you can still use your M camera as a backup body for your R while not having to carry extra lenses.

Those could be reasons to want it. If these are reasons for you is up to you. But for others those reasons could be good reasons.
