I agree for me handling/ergonomics feel are critically important . I dabbled in Sony for FF mirrorless { prior to a happy return to Nikon  }. Though their cameras have excellent image quality and offer just about every feature you could ask for. I did not like using them { A7rII,A7rIII } from the start and it got worse every time I used them. Now this is my opinion on what I want from a camera others will rightly have their own personal likes.

For me , the Z7 was better in every way that mattered to me , better build, better feel in the hand , better menus { though I have been using Nikon DSLR's for many moons} , better IBIS , excellent image quality . As you suggest it has to be enjoyable to use otherwise it does not matter a jot how many fancy features it has
