That’s exactly how it works.
Press the AF-On button to focus.
Release the AF-On button to lock focus.

Nope.
However you need to go into the Custom Functions menu and change the operation of the Shutter Button to NOT autofocus. That way the camera doesn’t start to focus all over again whenever you (half) press the shutter.
Second, can any of the buttons be programmed to bring up the minimum shutter speed in auto iso?
Not that I know of (I always shoot in full Manual tho).
Third, is the m6 ii shutter sound quieter than either the m3 or m5?
It’s louder than the M5’s shutter.
I can tell that the (first curtain) shutter ‘wind’ motor is substantially more powerful than the M5’s, ostensibly to support the M6ii’s blazing fast 14 fps mode methinks.
Of course I know that the m6 ii has silent shutter which is lacking in my m3 and m5 (except for some scene mode that I never use).
I find it to be a very useful feature. I shot our holiday get-togethers with the silent shutter. Very stealthy (esp with the quick-deploying tilt screen).
