m6 ii questions

I have the m3 with original detachable evf and the m5.  I'm considering the m6 ii.  The m6 ii seems to be much more full featured than my m3 and m5, which seem crippled in comparison.

First, could someone explain how the af-on button works?  If you are using af, can you press the af-on button to focus?  Do you have to hold it in to do back button focus?  If so, can you set it up so that you can toggle it?  In other words, can you release the af-on button and the focus is still locked until you press the button again?  Or, do you have to switch to manual focus to do this?

Second, can any of the buttons be programmed to bring up the minimum shutter speed in auto iso?

Third, is the m6 ii shutter sound quieter than either the m3 or m5?  Of course I know that the m6 ii has silent shutter which is lacking in my m3 and m5 (except for some scene mode that I never use).
