I was wondering whether a fixed focal length would suffice on vacation?

This is very personal, and also depending on how and what you typically shoot.

On a recent trip to Hungary, I took my Monochrom with me, with just a few lenses. Eventually, most lens-switches were for the sake of playing with another toy. In hindsight, I would have been fine with just a 40mm and an orange filter.

On a trip some time ago, I had my (old) DP2 with me for the daytime/outdoor-shots, and my Fuji + a standard prime for the indoor/night-time.

If you don't do much indoor or nighttime, just a Sigma would be fine. Otherwise, add a second compact camera.

This is excellent info, thanks. I would mostly shoot outdoors in daylight, or evening light. For the rare indoors and night shots, I could make do with the RX100.
