GoPro Footage Degrading After Processing

I have a question perhaps about exporting video from Premiere. I've owned several GoPros and have continually been disappointed with the finished video after I've graded it.

I'm just wondering if there is a fundamental step I'm missing. I have a Sony RX100IV that I use for golf video and generally get wonderful footage from that requires very little processing.

The GoPros however are different kettle of fish. Now I know they have different sensors, my issue seems to stem from the native video looking superior to anything I've tweaked.

I've attached two screenshots here. One from the camera and another after a quick play. Could removing lens distortion be the culprit? I can't really think of anything else that seems to blur the image. All that was changed was the colour and lens distortion correction

I select render at maximum depth, use maximum depth, VB2 2 pass etc.

This footage was 1080 and not upscaled.
