Do professional photographers mainly use manual setting for photos?

Do professional photographers mainly use manual setting for photos?

I'm thinking of subject such as landscapes where there is little or no action then would a professional cameraman likely to use manual camera settings rather than A, S or P settings?

I tend to leave it up to the camera when I use the P mode but I'm keep to learn how to use my camera in the manual mode. So it may be a matter of this is what the camera says the exposure should be but this is what I want the exposure to be.
It also seems more fun in the manual mode rather than just press the shutter for each photo.

The other way might be to shoot in the RAW mode and do the exposure setting in post production.
