You might want to consider applying the 15% Stocking fee towards the purchase of the Canon 40D. Then struggle with your 18-55mm and the 85mm f/2.8 on the 40D while you are saving and increasing your budget For the following.

I would like a zoom I think. 70-200. I know they're expensive though.

Looks like you might need to increase your budget to $2000 or $2500

Remember the 70-200 also takes care of baseball.

Ps. Get the 70-200 first(use on 40D) then keep saving and get the 7D mark ii

Ps. Trade in the 85mm towards the purchase of the 70-200mm

I think if you don't save for the 70-200 you will be disappointed and be saying I wished I had a 70-200 a lot.   It's your dream lens

Also IMO the 7D mark II is canons best aps-c camera.
