But... the RF mount is still young, and so is the future of M mount in light of the M6II. The M6II is like the first M mount camera that begs for sports capable telephoto lenses. 
I wouldn't by one for birding cause the lenses for that isn't quite there. Though arguably their 55-200 might be an option since that gives you 300mm equivalent on FF. But the fact that they did come out with the M6II, and show cased it's performance in a sports senerio... It is an option for some. Matter of time to see if they release better glass to match it. Personally I would't get one because of glass, and the fact that you have no hotshoe with the EVF mounted. 
As for the FF then cropping argument. Good one. Would be worth it... if they actually had good fps. Rumors put it at 5 fsp at 75MP +. Compared to the R that is a feat, and would roughly indicate a 7-10 fps for a 30MP EOS R2 (hopefully) but 5 fps is hardly a birding capture rate. 
I leave sony for good reason. But that A7RIV would be better for the cropping and fps BIF capture.
