As a note, I'm far from an experienced photographer. I just want to upgrade from a Samsung Galaxy S10 smartphone to a cheap entry-level mirrorless camera(and stick with the kit lens, at least for some time). Hope that one of these cameras would be an upgrade though (and also the spent money would worth)

First of all you need to decide for what purpose you buying camera for? If you not going to print A4 and not going to edit raw's so it dont worth it. S10 has much more low light IQ than most of aps-c cameras. Main advantage of aps-c cameras is detalisation that can be seen only on big screens or prints.

Difference between sensor IQ of m200 and xa7 is negligible. I'd be looking in an ease of use. M200 has only one control ring and this is a flaw. But maybe m200 has better autofocus perfomance. I had xa3 and i have m50 now. Dualpixel of m50 is much better than xa3 autofocus.
