In camera controls versus in processing?

Specifically, with the EM-1 II, is there any difference between raising contrast while shooting versus doing such an adjustment after the fact. My concern is shooting mosses that have little differentiation for the camera to pick up.

I have many examples, but to be concise, I can get good detail when I shoot against say a differentiated dark background, but when I cannot it is a lot like shooting multiple layers of green Jello. The gear is not the issue, nor is technique. The quality of my images seems to be controlled by lack of contrast in mosses. Here is one such image.

When I get good differentiation of the moss against a background that is other than the color of the moss, the results can be very good.
