If this were true, then it would apply to their DSLRs when using LV. Have you tried testing this? I did when i owned my 70D, i compared photos taken in LV with dual pixel, to photos taken through the OVF. No difference. I think your theory is false.

The more likely reason is Canon is notorious for limiting the performance of cameras to match their price point. This can include sensor performance, not just AF. It could even include sensor wiring, like whether they use copper wiring or not.
